Suggestions for Crocodile Dundee knife (Timber Rattler alternative)

Condor Dundee Bowie. An incredible workhorse of a big blade. 3/16" thick, 11" long clip point.

Kabar Heavy Bowie, Condor Dundee, and Ontario Marine Raider are all great large knives. They are high carbon though so that does not solve your rust issue.

Cold Steel Trail Master SMIII is far and away my favorite stainless bowie for outdoors.
 
The inexpensive knife you had was stainless steel. It may not be a great knife but the steel is more stain resistant than any other knife you have talked about, or had recommended. By the way the Cold Steel website has full retail prices. You can find them elsewhere for less. You need to learn to take care of your knives because if you can rust out a knife made of 300 something grade stainless ( or 400 grade stainless) you can rust out anything with the exception of H1, and Titanium. Neither are options in what you want and are looking for.

The Cold Steel Trailmaster 9.5 inch, or Laredo can be had in a tool steel ( tougher, easier to sharpen. Not stainless), or the "san Mai" which is a VG1 core with 300 something sandwiching layers. For a really tough chopper that is a tool steel try the Svord Von Tempsky Bowie in L6 tool steel ( band saw blades) http://www2.knifecenter.com/item/SVOVTB/svord-vtb-von-tempsky-bowie-knife-11-carbon-steel-blade-wood-handles-leather-sheath This 11 inch monster with convex edge is performance wise everything you want except stainless steel. You rusted stainless steel anyway.

My suggestion about that is every night rinse off the salt and corrosive elements from the day, then oil, silicone ( what I use), or wax to seal up the steel. Remember though you need to get the salt or other corrosive stuff off before oiling or you waste your time. Forget about trying to "force a patina". If you rust out a low carbon high chrome stainless putting a patina on your knife won't help you.

Honestly if you want a knife that looks like the Dundee bowie, and is heavy enough to do the work you are looking to do with it, I'd suggest getting the Outback Bowie from Down Under Knives. You'd be hard pressed to get anything that looks as nice unless you get someone to make one for you. It chops like a champion, and cuts like a demon. 440c stainless steel that the company states is deferentially hardened so the spine is softer than the edge so it'll flex as opposed to bending or breaking.
