I would not go taller - I would go longer.
For everything other than daggers, I would quench full edge down.
This was at the beginning of a shop move and I was emptying the tanks - but you get the idea.
These are 7 inches square and 30 inches long.
That way the entire edge hits the oil at once.
I would say the same as Karl... only for the exact opposite quench method. I do edge up(spine first) quenching. I find it stabilizes the edge and eliminates the tendency for "tip dip".
