Summer time drink

What is your favorite summer drink? I have a few, but I'd have to say a Gin and Tonic or good dark beer is probably at the top. Ice tea for a na drink.
 
A fresh made Mojito is my favorite. (NOT the nasty malt liquor crap found in six packs. ugghh!)

My Mojito recipe`:

2 oz. light rum or vodka (or more if you like)
3 oz. simple syrup
1 whole lime
12 - 15 fresh mint leaves
ice and club soda water

Muddle the mint leaves into a tall cooler or highball glass
cut lime in half and squeeze 1/2 into glass with mint leaves
add simple syrup
add cracked ice
pour in the rum or vodka (I prefer rum)
slice remaining half of lime into sections and add to glass
top off with club soda
stir 'till mixed well
garnish with mint leaf sprig and lime slice

I make them much the same way once the mint starts growing around here. Only difference is I muddle with the lime, mint, and about half that much sugar and use soda instead of tonic.
 
Back in my pre-gout days, when I was able to have a drink now and then, I used to like the Singapor Sling.
 
Southern sweet tea, RC Colas with real sugar in the glass bottles, and beer, just not all at the same time.

If there's company, a pitcher of Mai Tais is usually appreciated. Everyone makes Mai Tais differently, and they have a bad reputation as a "tourist drink" because most bars just add a shot of Bacardi to some Hawaiian Punch and call it a "Mai Tai."

The Original Trader Vic's Mai Tai is a good drink, and you can find the recipe online, but it's complicated.

A friend of mine who owns a local pub makes the best Mai Tai I've ever had, and the recipe is something like this:

To a pint glass add the following --

1 shot of clear rum (Bacardi)
1 shot of gold rum (Montrey Bay)
1 shot of dark rum (Goslings Black Seal)
a splash of grenadine
a dash of Rose's Lime Juice
add ice cold pineapple juice to fill

Shake & serve -- no ice, no garnish.
 
Lately it's Strongbow Cider, or Gimlets when I'm feeling spunky- I don't process spirits in the form or liquor that well anymore, so I need to be selective & close to home for those. Otherwise, lots of water or sweet tea.
 
The "only" mixed drink I like (unless you count scotch and a dash of water) is the Mojito. Mine are made with:
-Light Rum
-Key Limes
-Fresh Mint
-Cane sugar
-Club soda
-Crushed ice

I pour a layer of sugar in the bottom of a pint glass. Next are some slices of lime and some mint. Add club soda and muddle it all together. Strain into another pint that has a few oz's of rum and the crushed ice. Garnish with a sprig of mint and a slice of lime. Everyone swears mine are the best mojitos they've ever had.:thumbup:

We had a Mai Tai party a few months ago where we tried out every recipe we could find. The Trader Vic's recipe was virtually undrinkable. It's almost all rum, spiked with a little orange curacao and orgeat and the juice of one lime. It's not a fruity, refreshing cocktail, it's more like drinking a manhattan.

Your buddy's recipe is the way to do it - lots of pineapple, lots of rum, flavor and color to taste, in a big glass. I basically go with something like this:

mix in a large martini shaker with lots of ice:
3 oz light rum
healthy shot of lime juice
3/4 oz orange curacao
3/4 oz amaretto
shot of grenadine for color
6 oz pineapple juice

pour over fresh ice and top with 3/4 oz dark rum float


Here's another great summertime drink: Beer margaritas

1 small can frozen limeade concentrate (makes 60 oz)
4 light beers
12 ounces tequila

Mix up the limeade using the beers and tequila instead of water.
Serve in pint glasses over ice
Don't mention the beer until people really press you for the recipe. Most people are surprised to realize that they've just knocked back a couple of beers.
