Ever wanted to own a Light Saber in the Kitchen.
This is it.
I used this knife the last 2 nights for supper prep (hence the light patina beginning to form) and was blown away by the performance. My jaw hit the cutting board with the first cut
through an onion. I was floored again when I did not even feel it going through the tomatoes. So naturally when I got to the chicken and peppers (we had fajitas if you were wondering)
my expectations for high performance were not unfounded. After starting with .065" CPM 10V at 64-65 Rc I laid down a very slight convex grind to a zero edge and then applied the
slightest micro-bevel.
Weighing in at only 6.3 oz this lightweight cuts well above it's size.
