This AEB-L stuff is just pure-dee-o awesomeness!!! Seriously, a stainless that behaves like carbon? And it's been around HOW long with the razor industry? Raaaaaazors
Speaking of razors, I have a beautiful kitchen knife in this great steel to offer you. (Did he just compliment his own work? The balls on that guy)
First, let's get the specs down...
Overall length: 9.7436812" (What did he use to measure that thing with anyway?)
Blade length: 5 5/16" (Geez, now he switched to fractions? At least it's still in inches)
Handle lenght: 9.7436812"-5 5/16". (We're supposed to subtract?) Oh, ok.....about 4 1/2" (Now we have estimations???? :grumpy
Spine thickness: 1.778mm (metric....we knew he'd go there)
Heat Treatment: Cryo treated by Peter's Heat Treating to 61.5 RC. (Thank goodness they did it. He'd of probably treated it like 1084)
There is a nice gentle taper from the handle to a sharp point.
The edge was taken down to ~0.007" before sharpening.
30 degree total edge sharpened on water stones to 8000 grit.
The handle is stabilized walnut sanded to 800 grit and the blade finish is a true 600 grit finish.
This is NOT a knife for going thru bones or frozen food. You'll know that the moment you pick it up! It is ground VERY thin. Thin is in! There is some flex to the blade, just right tho.
And now for the pics. If ONLY I had as much fun taking the photos as I did making the thing! Not an easy thing to do, photographing knives! (Sure it is, you just don't have a clue as to what you're doing. Just ask Matt G about how this guy is clueless)
Now some of you are certainly scratching your heads (Nick.....stop scratching :stupid
as to why there is not a maker's mark on this knife. Well, my story is that I am in BETWEEN maker's marks right now, and I'm sticking to it.
