Super Thin Steak Knives

Commonly called Busse Elmax Steak knives...and I know for a fact they do damn good at the task, as well as cutting a burger in half and all necessary trimming on a pork chop...and so on.
 
I am curious. I have never handled the steak knife; I know it is very thin. Is it literally a steak/kitchen use only knife? Or do some of you guys actually carry these things as an edc and us them outdoors?
When holding the BESK (Busse Elmax Steak Knife) I get an overwhelming urge to go fishing. It's not very flexible but I just wanna fillet fish with it.

I butterflied out some chicken breasts last night with mine. It was as if the chicken separated on its own. These things are scary sharp!!!!
