Am I the only one who is not familiar with Carter Cutlery?

What do y'all think of this test?

How do you think various GSO's would perform?

I find it very ironic that their business, or at least the test area is adjacent to Molly Maid Services :D

But as Grand Pappy would say, "very tacticool" ;)
 
I am a huge fan of Murray. He hand forges everything in the Japanese style. He is the man that really taught me how to sharpen a knife. He is Canadian and immigrated to Japan where he was an apprentice bladesmith, then worked as a village bladesmith prior to immigrating to Portland. I carry one of his neck knives every day, and I have 6 of his kitchen knives. The man knows his stuff, and every Carter blade I have is an exceptional performer.

Mc, I must have missed it from the posted video but what kind of steel does he use? Having been trained in Japan, does he happen to have proclivity for using and preference for the Japanese produced steels?
 
Familiar with his neck knives, not the FS1. That was nicely done. How old is that video Silver?

I went to the Carter website. Outta my price range!

Hitachi white and blue are his go to steels. The neck and field knives as well as many kithen knives are forge welded to stainless. In the first picture you and actually see where the San Mai is.

Big spender! My Victorinox Fibrox knives do the kitchen work :P I do have a Tojiro DP gyuto that is awesome also though.

ETA- That was a fantastic cutting test on that Carter knife.

Really! I mean who's not a big spender at Costco anymore?! I don't think I've ever walked outta that place with less than a min $200 expenditure excursion in there and I'm single! :eek:
