Survive in Louisiana

It's a difficult thing to do, but someone needs to let you know how to survive down here in Louisiana on a Saturday night!

First off, make sure that you have your survival kit.

Next you need to go hunting. First off tonight we're looking for the wily pancetta. Ah, I think I've spotted some!

It's a little gruesome (weak stomachs may want to look away), but you'll have to do a bit of processing. Throw that in with some pearl onions and set it to the side.

We still have some more hunting though. Hopefully those traps we set have done their jobs!

Look at the catch! A quick slice and dice yields a more suitable format.

This is how to survive a Louisiana Saturday Night when you're home alone, hungry, and have a new Browning Barker/Cromwell bowie.

Also seen here is the every trusty Mora. The two play pretty well together. I hope this helps save someone!
 
Survival isn't worth it in Louisiana without Boudin!

Yeah the chicken looks great, as well as the Green beans, but if I ever get myself into a survival situation in LA, you better bring me a bottle of Cuervo and a bucket of Crawdads!!!
 
Haven't had the chance to do some chopping with the Browning, I just got it last week as a gift from a friend. A good six pack of Beck's was consumed. Gotta season the chef! The chicken seasoning mix was flour, onion powder, paprika, cayenne and kosher salt. I can't give you exact measurements, I just mix to taste. I cooked a lot more than in the pics, so I had a lot, but I'd have to say start with 4 cups of flour, 1/2 a cup of salt and a 1/4 cup of everything else, then start tasting and fix how you like it. I know for mine, I have a least a cup of cayenne. It's spicy, but not as much as you'd think. It's got a good kick though. Heat your oil to 375 and cook 6-7 at a time. Once they all float at the top and the bubbling has mostly stopped, check one. As with any chicken, you gotta be careful to cook it enough.

I'm originally from Alexandria, but now live in Pineville. Really just across the river. I'm only about 1.5 hours from you if you still live down there. Down in Lafayette every other weekend.

My dad traveled all over Louisianna, so I know exactly where Pineville is. (They still got the looney bin there?)

Heh...why yes...yes they do. It's about 2 miles from my house. Shorter if you cut through the woods. Why do you think I have so many guns and knives :eek:
