3V will hold up well at 17 dps. If it does not work for your application, just take it to 19 or 20dps and have a double bevel. No need to grind it down and start over. As you sharpen past the original 17 dps bevel, the edge will only get stronger by having more steel behind it.
That knife was well below 17° if the bevel is any indication...i have taken several gsos to 15-18° per side and I've never had one wth a bevel near as wide as that one...also the slight recurve makes me thing it was belt sharpened.Definitely! Yea 13° per side is a lil more reasonable for the bevel width.![]()
I'll see how it holds up and just clean up the edge and put a microbevel on if it doesn't work out.
