Sushi Knives?

Who currently makes good quality sushi knives? I welcome both production and custom sources.

Most of good sushi knives are made of carbon steel, very thin and have shallow angled edge, assuming every day maintenance. Also there're many kinds of such knives for every kind of fish made by nameless bladesmiths all over Japan. but... Unless you'd be a pro a stainless cooking knife with thin blade is recommended. Pro's sushi (or sashimi) knife is just too much for us amateurs.

I believe that Murray Carter makes what you are looking for.
Don't have a lot of info on him, but there was a recent post about him on the forums.
