I wondered about the overall strength of a doweled Wa handle until I decided to deconstruct one. It hangs over my bench now as a reminder of their strength.

I'm no expert on this, but it's my understanding that ferric chloride etches are the way to get some actual depth and distinction between the steels, but the coffee adds a nice stain to the darker parts. I think the coffee etches hold up well when it's combined with the ferric, but not when it's on its own. Hope that makes sense!
The handle looks great but the damascus blade with the gray background I think is a bit busy and takes attention away from the blade. I personally would try a white or maybe light, monochromatic background. Your focus and lighting look great and those are the harder things to get right.
