I have seen a coated CGFBM with the coating still on rust under the finish. There was some decarb that did not get taken off before coating.
That should be the only reason your stripped infi will rust, unless you are in a high salt high humidity) like Florida, or coastal. If you have a problem with it on a stripped knife, hit it with a quick light sanding and should be good to go (or stainless wire brush on the bench grinder).
It is not completely stainless, but even cutting lemons and limes with mine has not caused rust or discoloration.
