I have seen a coated CGFBM with the coating still on rust under the finish. There was some decarb that did not get taken off before coating.

That should be the only reason your stripped infi will rust, unless you are in a high salt high humidity) like Florida, or coastal. If you have a problem with it on a stripped knife, hit it with a quick light sanding and should be good to go (or stainless wire brush on the bench grinder).

It is not completely stainless, but even cutting lemons and limes with mine has not caused rust or discoloration.

I wonder how well a double cut knife finish would take a bluing.

It must work Brad. But do not let the gunblue more than 3 minutes or it will "eat" the steel and you will have like rust spots. It is better to try 4 x 3 minutes than to let the gunblue 12 minutes on the steel.
 
I'm a little scared to try it out on the CG ASH... does anyone have any photos/experience with a DC finish and gunbluing?

Or any more photos of refinished-blued Busse's?

I got out my competition finish Jack Hammer and Hell Razor, and although they've never been used they were pretty well rusted, so I thought I'd try the Hoppes bluing kit. The bluing came out pretty rough, but not in a bad way. The blue stuck to the decarb a lot better than to the bare INFI, which gave it a sort of old and worn look. I like it.
