I am fairly new to knife making and was wondering why you would not forge the tang out and thread it for the pommel instead of adding a piece to it?

I do it too. i guess one argument for using other material for the threaded part is that you can pin the two parts together and have an articulated tang bolt. I can see how that might make life a little easier.

Some makers will add a flexible threaded extension to their tang to aid in tang/pommel/handle line-up.

Your right this should be in the makers section.
And in answering the ? I do both, depends on the curve of the handle.
