Target Hardness for 1095 Skinner

I am going to do several skinning/general camp knives - 1095, FFG, 4.5" max blade. How hard can I run the 1095 for these knives? I will send off for professional HT.
 
I bring my 1095 camp/field knives to 60 RC. .020" behind the edge and 20 DPS, no chipping, good edge holding.
 
I go Rc61. I don't use a lot of 1095, but the few I did were in that range. W2 gets Rc62, or even Rc63 if the owner is skilled.
