I've seen some photos with the "pinch lock" part facing up and some facing down. Now, for belt carry, is there a proper way for this pinchy thingamajig to face? Up or down?

dumb question but I need seasoning,

I've used em both ways. Pinch part up is easier to get to if your removing the item from your belt alot.
 
I use mine with pinch down. Since you can move the adjustment bar completely from end to the other, it can easily be mounted either way depending on your preference.

I have the small Tek-Lok pinch up on my WP, and it fits a 1 1/2" belt very snug - nice for urban carry. The large Tek-Lok comes with the AR Kydex, and that goes pinch down allowing for belt adjustment. The large Tek-Lok can be carefully rotated to 45 degrees, and that makes for an easier cross draw for me personally. I got the small one from Blade-Tech Industries.
