Wanting to make a personal chopper w/ this as a handle, however, I want to do some heavy contouring which means that I need thicker slabs (only seems to be available in thicknesses up to 3/8"). Wondering if I can use some g-flex to epoxy 2 quarter inch slabs together prior to shaping? Would this work or create any issues?

I've only used Terotuf once so hopefully more experienced guys come along.
It just seemed to soak up epoxy quite a bit so you might try a sample piece, put it in a vise and bang on it with a hammer to see how it goes.
Actually I have a set that you can try if you want that soaked up some oil on one side so I'm not going to use them. I can send them to you if you want. Just pm me your address.
