To al of you who chimed in about kitchen knives, Thanks. I just got a package with an 8 inch chefs knife, 10 inch bread nife and two paring knives one se and one pe. All made by victornox. They all ook very nice though the plain edge paring is a little rough and not as sharp as I would hope. The cost for this bevy of kitchen knives, about the same as a single henkells four star chef's.

Cool! You should look into the serrated 10" chefs, its the most widely used in my house, I think it may be designated as a "sandwich knife" by Victorinox. Wonderful on tomatoes and bread. When I worked in the kitchen at the Radisson Hotel we made our own croutons from stale bread and this knife proved to be absolutley priceless for that job.
