I can only speak for what I used, and had, and thats not saying much as before my arrival here I didn't care what the steel was, so I mostly used 440 or AUS8 at best. After few years here I went through about 15 knives (bought and traded), I only bought Busse, and blades in 154 and s30v.

So

Fixed - INFI
Folder - s30v
 
s90v..folder
cpm 4 fixed

Heat treatment, blade geometry, and intended use might also factor into the equation.

My steel preference for a folder is actually CTS-XHP. Won't hold an edge as much as S90V but def better edge holding than most steels and easy to resharpen too.
My favourite fixed blade steel has to be 1095. Many steels are tougher, can get sharper or whatnot, but 1095 seems so balanced to me, that everything else actually feels WEIRD for a fixed blade steel for me... :rolleyes:
Thats just me though.
