Thanks brother! I use the Wicked Edge Field & Sport Pro model plus several additional stones/strops. It takes a while to reprofile --- but when it's done -- nothing comes close

The WE will get the job done, but as you know it takes a LONG time. If you enjoy that kind of edge on ALL your knives and value your time, I recommend looking into getting a belt grinder of some sort. The Worksharp is popular, however a small, cheap 1"x30" or 2"x72" benchtop unit can easily get the job done with the right belts in a fraction of the time that it takes to get the same work done with the WE.
