The "I'm willing to try your recipe give-a-way" (and BLJ review)

5 lbs. cubed beef
1/3 cup peanut oil
1/2 cup chili powder
1/2 cup flour
1/4 cup garlic
2 tsp. cumin seed
4 cups beef broth
oregano
Black pepper
red wine vinegar
hot or med. pepper flakes
Salt

Can use olive oil instead of peanut oil
Add flour after browning beef to make roux
May not need salt if boullion is used
Let it simmer til flavors are infused

The ingredients without amounts on them are "to taste."
 
In the spirit of this thread I broke from my normal recipe today and threw together a batch of chili. It is still in the crock pot, so no taste reviews yet. I did not feel like going to the store to get ingredients for my chili today, so I was resourceful with what I had in the cabinets, freezer, and out in the garden.

Started with 1 package of tenderloin and 2 of stew meat from my Thanksgiving buck last year. He does look delicious doesn't he?

Chopped into small cubes. Don't have any ground meat for this chili. This will be a whole different style of chili for me.
Added to the meat was a vidalia onion and some fresh peppers from my garden outside. I decided to throw in 2 jalepenos, 3 cowhorn peppers, 2 red chilis and 2 serano peppers. I like spicy. Did not have any bell peppers in the garden today, so I won't have one of my normal ingredients available for this batch.

I threw all this in the crockpot with a can of rotel, half a guiness, some Worcestershire, red wine vinegar, salt, pepper, chili powder, some garlic, cinnamon, cayenne pepper, cumin and some of the other seasonings on the counter in front of me. I think I skipped over the lemon pepper, I hope so at least. I use these seasonings in my chili normally, so nothing out of the ordinary here, except that everything is being cooked in the crock pot instead of on the stove. Sorry, no specific amounts of the above ingredients, I just add til its right.
I quick soaked some pintos(I normally use red kidney beans) on the stove while the meat and veggies were heating up in the crock pot.

Just recently added a little corn to the crock pot, thought I would try something new here. Not normally a corn in chili fan. I will add the pintos to the crock pot once I add the tomato sauce and let everything blend for a couple hours.

Ill have to post back when its all ready to eat. There should be quite a difference from my normal recipe. It is much more 'chunky' and is missing many of my normal ingredients, but it was prepared in a hurry and with ingredients that were on hand.

If nothing else, Hutch will sure enjoy it.

The recipe I generally use, is tried and true...

Winner of the 1984 Texas State Men's Chili Cookoff:

Ingredients:
3 pounds cubed beef
2 tablespoons paprika
1 tablespoon onion powder
1 1/2 teaspoons cayenne pepper
2 teaspoons boullion, Beef granules
1 teaspoon boullion, Chicken granules
1 8 oz. can tomato sauce
4 teaspoons ground cumin
1 teaspoon garlic powder
1/2 teaspoon fresh ground black pepper
1 1/2 tablespoons salt
6 tablespoons chili powder
1 split jalapeno chili pepper

Briefly sear meat and then add chili pepper tied in cheese cloth sack, paprika,
onion powder, cayanne pepper, boullion granules, tomato sauce and water to
cover. Simmer, covered, for 1-1/2 hours or so. Add cumin, garlic powder, salt,
black pepper, and chili powder. Cook for another 30 minutes or until meat is tender.
Remove cheese cloth sack with jalapeno pepper and serve.
Beans, ( I have found pintos to be best) prepared and served on the side to be
added after serving (NO BEANS FOR ME!!!). Same with cheese, onions, or what have you. A side of cornbread is generally best.
