Awesome! Please post photos. Good find on the cast iron skillet. Cast iron and carbon steel makes cooking more fun
OOp's sorry, no pics but it came out great. First time cooking with the big skillet in the oven. Using the lid kept it nice and juicy. We will do it again soon with pics.
 
Just as an aside, Joy of Cooking was a Rock group in the 1970's, and did a couple of albums. A few songs were pretty good. Now back to our regularly scheduled program. Lol
 
I will post food in this thread eventually, as it appears I have the necessary equipment. 😅 I actually searched and found an older version, I was told it had more wild game recipes. 🤷🏻‍♂️ Without this forum, I would never have known about the joy of Becker knives, or that he and his mother were amazing people/chefs. I'm pretty sure the 1975 edition is the last one with all the wild game recipes - once E took over, those were dropped to make room for all the new recipes he added.
 
I used Joy of Cooking’s pot roast recipe for my family Easter meal.

I like keeping things well organized and prepped, it helps my anxiety. I try to make it as foolproof as possible because I always mess something up.

I haven’t had steak for awhile and came across some really well marbled NY steaks and I couldn’t pass it up.

I used my cast iron 10” skillet. Let the steaks come to room temp. Heavily seasoned with coarse salt and fresh ground black pepper. Basted the steaks in kerrygold butter, garlic, rosemary and thyme. Pulled my steak out at 120 degrees and carry over heat took it to 127 or so.
