The knife that never needs sharpening

Me2, Because of it's inherent brittleness ceramic blades have to have a greater angle so the blade isn't as 'sharp' as steel. For real sharpness glass is capable of a very fine edge !

These knives were coomon during the Depression for cutting fruit, cake, or other foods that would have their taste affected by a carbon steel blade. They worked very well, but were prone to chipping if not treated with care--as can be seen on this one.

Does anyone know if the ceramic used for knives is actually fired (sintered) to full density?

If DLC is that great, why not make a blade from it? :p

True DLC is harder than diamond at least in laboratory grades, but can only be applied as a very thin coating to a substrate. It gets its properties from only being one or two molecules thick.

The point was to have a very thin layer that wore more slowly than the rest so it always formed the cutting edge. :D
