I have mineral oil too. I have about every type of oil/protectant there is. Have't noticed any of these problems with the olive oil...maybe because my coats are very LIGHT? I'll just switch the olive oil out for the mineral oil bottle.

I wash my blades with soap and warm water, dry them and put em in the sheath. No oily mess, no rancid oil, and certainly no rust. And always ready to process wood or food.
