Knives should not present much of a problem, but you might check. I have carried at least one knife in Argentina, Bolivia, and Chile act.
I would suggest one good stout folder; if you are to be in the boonies then a good fixed blade of 5 to 6 inches is also in order. Quite often, I will carry a Reeve Project I and the Busse BA3 as well as a folder. Nevertheless, even the Project I is overkill, if you are in the bush, you will have a machete for the big work.
