Thin Forged Gyuto

Attributes:

This is the thinnest style that I make. The blade very similar to what you find in forged Japanese cutlery. It has a very thin edge in a short bevel which provides great food release. This is a timeless style that also provides a rust resistant surface for most of the blade. Best part about it is, they are very fun to make and use. I would recommend one of these to anyone.

Material:

1084HC steel
Curly Maple (green) & Maple Burl
Box elder spacer
8” Blade
2” Tall
5” sculpted Faceted handle
61HRC
1/16” thick at spine

$375 USD

I have a Runningman paring, the fit and finish are artwork and the carbon blade keeps edge and cuts effortlessly! This price is a steal.

Just grabbed this up from your website! Super excited, I've been drooling at your work for a bit. Can't wait to try it out! Any recommendations as far as sharpening / care go? I've never used 1084 before. For reference, my current knives are chefs in SG2 and MagnaCut and a paring in 20CV. Thanks a lot, love your work!
