Thinnest blade lock back folder available

I know it’s way over your length limit, but you should really take a look at the Spyderco Catcherman. I got mine specifically for food prep and I can’t recommend it enough. Hopefully in the next few years we’ll see an H-1 version. It would be nearly perfect with that steel.
 
It's not a lockback, but a stainless Opinel would work great for your purpose. Very thin convex blade. The lock is reliable, and I suppose you could put a lowrider clip on it. Since you customoze knives the pear wood handle could be shaped any way you like.
 
I'm with rugbymatt. Al Mar Ultra light. I didn't like the factory supplied clip, so I mounted my own clip using 1-72 button head screws. The screws holes are tapped in the Micarta handle. It is amazingly tough. The screws have not pulled out, even after bending the clip.
