Only strip it if you polish it afterwards. Beadblasting is baaad.

How would gun blue work on stripped SR101 ? Would it also work if you blasted the SR101 ?

Carbon steel is pretty easy to maintain. Let a patina form and keep some wax or lip balm coated on it if you choose to go stripped. A good finish or polish helps a lot.
