Forgive me if someone has recommended this already, but here it is: Cold Steel Hold Out series (there are three different blade sizes). I own a H.O. 2 (OD Green handle and with black blade coating), which is the medium sized version. The quality of the steel is great, and it's backed by the Tri-Ad Locking mechanism. The opening action is bit stiff imo, but over time (along with lubericant application), it has gotten smoother. Check them out if you haven't before.

I stand corrected on the corrosion bit but I still think a Metamorphosis is a decent knife for what the OP intends.
