Thrift Store: how'd I do?

Bottom 4 knives in the pic sound like nice knives. Good work.
The kaicut and the large carbon chef knife are most intriguing. The big chef knife will need some work to even out the edge, but should be a fun knife to work on. The kaicut I have not heard of before, but the 13C26 steel is a good solid blade steel and should sharpen to a very keen edge. Either way I think you are getting an upgrad all the way around.
 
Kai cutlery is a good japanese brand, they make Shun. You did great!
 
Is it though? I've never found any evidence that Kaicut is related to Kai ltd, other than people making the assumption based on the name. The only info I've ever found on the brand has them as an industrial cutlery manufacturer that started in the early 1980s.

Given the steel, apparent quality, and name (though Kai is an extremely common name) its probably related. Just wondering if you had any helpful info.

Nice knives and they are definitely worth $25.00...

I agree with Marcinek; the Solingen is the winner of the group IMHO; many people I know that are "into" kitchen cutlery talk about having one large main knife and that is used for many tasks so it becomes a cherished tool... YMMV.

Good luck on refurbishing them. :thumbup:
 
Since day two of this post I have been oiling the handles.

Today I took a scotch bright to the Soligen, I would say it is coming along nicely. I have not atempted any sharpening yet. The logo looks to read Premier Razor Steel trademark. By searching Soligen hand ground I have found a few knives that seem identicle but for the trademark.

I think the Kaicut is my favorite, the wider grip fits my hand well. Besides what is posted here I found one post it is call a Japanese supermarket brand.

I know the Oneida is the lame horse in this race but I still think its a nice set and adequate for a bread knife at least. Like the Soligen I found alternate marked versions, these read entrée cutlery and seem to have a thumb groove for dominant hand use.
