I do very few hollow ground knives now. I do mostly flat ground blades. But, I still have to finish out the flats. I spray glue wet & dry sandpaper on a flat piece of granite. I start with 360 grit and then go up.This will give you a very flat surface. If you give your hollow grind a mirror finish and your flats a satin finish, that gives a good looking contrast.
