The handheld wands will detect any metal, magnetic or not. They are normally set to be very sensitive. If you get wanded, I guarantee they'll find titanium.
The big walk-through gates are set to be less sensitive. Provided you don't have too much other metal on you, you'll probably make it through with a small titanium knife.
The best bet at airports is just carry a regular knife that passes muster (<4" blade, unserrated, not too mean looking) and drop it in the tray. If you're trying to get into a courthouse or something like that, my strong advice is not to try. Aside from the ethics, if you get wanded and caught, I think you could end up in serious s***.
