In short, would the performance gained from losing the coating, outweigh the corrosion protection lost?

I live in Virginia, eventually will be back in Utah.
I don't baby my blades, but do take good care of them. Never put away wet, and generally oiled.
 
I'd be surprised if you'd notice a difference in performance after stripping. A worn, beat up coating looks far better than a stripped blade if you ask me.
 
SR101 benefits more from the coating that the coating takes away from performance IMO. Keep the coating for corrosion resistance.

In smaller blades where game processing and more delicate slicing comes in I'd say strip it.

I think so too. Beat it until coatings smooth if feel its too "grabby". I wouldn't mind stripping a black one though cause black looks cheap to me. Would never strip a muddy or green. Though Busse black has a molten rock look to it, which is cooler than others.

I agree with Justin 110%! Not only does a worn & beat blade look better (IMHO) and give a blade character, but INFI is carbon steel bottom line. I have had INFI gather decarb "in the field" and I just prefer not to deal with rust/decarb/patina whatever you want to consider it. The few pistols that I have left have all been cerakoted and I LOVE that stuff for its rust resistant properties. Cerakote is to my CZ 75 as crinkle coat is to my MOAB :cool:
 
I like the character of a coated beater.
 
I say strip it and force a patina then use it like you stole it. Every blade I have ever stripped performs better than they do with the coating. I strip everyone of blades, infi or sr101. Infi requires a little less maintenance than sr101 but it still hasn't been an issue. STRIP IT
 
She still has quite a bit of coating on her, so I would her alone for now I like that look
 
I had to say strip it. The only other thought was to put it on a knife grinder and clean only the grind itself, from the sabre grind down. That would still protect real estate that is not adding friction to the faces of the primary grind. After that it should be convex it full convex to zero, wicked sharp.
