Spyderco, Kershaw, Benchmade for folders.
Victorinox, then Wenger for SAKs
and RAT Cutlery, Fallkniven and Bark River for fixed blades.
 
In my experience
1. Spyderco, they kill everything, great designs, price, function, customer service, I own over 30 so yeah I am probably biased

2. Kershaw/ZT, great designs, serious no BS warrenty - break it = get a new one free, and great supporters of combat vets

3. RAT, they know how to make a no BS save your life survival knife

I just ordered a Fallkniven P1/G3 with Blue Bone Handle for my wife for her birthday. It is my first Fallkniven Purchase. If it is up to par with what I have heard, it will be added to my list.
 
Bark River, RAT Cutlery and Benchmade are my current favorites. I've had excellent experiences with all three in the field. Never had a reason to use their CS, but have heard all three are great in that department.
