Next is a one is a “one off” Japanese chefs knife by Edgeworks. The handle is made of thuya burl. The blade steel is forged Apex Ultra steel. It is a brand new super steel with a hardness of 66HRC but retains its toughness creating a knife that can get razor sharp and stay that way. ( More information can be found about Apex Ultra online.)
