Tosogata in Japan adhere to the old ways of making knives, using the San Mai construction. Many of their knives are offered in Blue steel with an iron jacket. They leave the hammered marks on the iron jacket, believing that the unfinished surface protects the "soul" of the blade. The knife I offer to you is heavily inspired by the Tosagata knives. But instead of Blue steel in San Mai, this "Santoku" style blade is made of a powdered form of M4 tool steel. CPM M-4 steel is highly wear resistant, due to the addition of Vanadium and Tungsten. While certainly not classified as a stainless steel, CPM-M4 does offer a touch more stain resistance than a regular carbon steel. The steel is not only very hard and wear resistant, but tough as well, due to Crucible's particle metallurgy, and is highly rated among the cutting competition competitors. While using it in the kitchen, you'll notice the edge retention is like no other knife you have used. The handle is Turkish Walnut, and is sealed with Danish oil and Tru Oil, and a final few coats of wax. I've incorporated a very slight "D" shape in the handle that feels extremely well in both hands.
