Touch-ups

I would probably go with a 1000 grit waterstone and a strop. The King deluxe 1000 and a strop with 1 micron DMT paste would be my recommendation. This will produce a great edge on most anything but will be especially good on softer steels. Softer stainless like on the Vic's performs better with a coarser edge and much over that 1000 grit mark and IMO the performance drops way off.

I didn't suggest it because I don't think it's the best option on VG-10 but the Norton India stone would be ideal on softer steels. Probably work fine on the VG-10 but it's a little coarser that I like on that steel.
 
for touch up's just get a leather strop, or balsa wood or whatever. apply compound (if you get more than one strop apply different compound to each one).
then strop your knife after use for a touchup. super cheap and effective.

the rest of the advice here is good also.
 
Sorry for the very late update.

I realized lately that the touch-up motion I'm using resembles a lot what I'd do with my Speedy Sharp. I never did a good job with it, and that's how I ended up purchasing the Lansky system.

That being said, the part that does the work is super smooth (AFAIK, Titanium Carbide).

I'm wondering if it'd be good at straightening edges and/or deburring. I'm guessing I should use it flat and use light pressure if I want to avoid messing up my edges.

What has been your experience, folks?
