In the event of a trade for say, a $120 knife for a $160 knife, is the rule that somebody just eats the difference, or is an exchange of money as well as knives acceptable to balance a trade?

You can even out the deal through cash or other items in order to reach an agreement, just don't go to the point of trying to go around the trade only rule. It might be suspicious if on a $800 knife you offered a Mora($11) knife and cash. I would consider that a cash deal rather than a trade.
