Traditional French Fry day

Just in time for Traditional French Friday is this simple knife from the town of Chambéry, tucked away in the French Alps.

Knife nuts are a silly bunch, I paid more and waited for an older version of a knife I could have picked up new last week at the local sporting goods store. Simply because I like the markings better. 🤔

Though unused, the locking collar looks to have mellowed over time to a nice, gunmetal grey.

GR stands for Gilles Reynewater who took the succession of Thiers-Issard in La Monnerie. He used to sign the blades "GILLES" (in caps) but since it was often confused with Fontenille-Pataud's Gilles he established his own GR brand.

Now that I'm finally ready to order my Laguiole, I contacted Pierre Yves Joyeux this morning in the hopes of ordering a shadow with carbon steel blade. His response time was impressive, he got back to me in just under a couple of hours. Unfortunately, Monsieur Joyeux no longer sends knives to the US, deeming it more trouble than it is worth due to the shipping complications and foreign exchange costs.

Hello Charlie,

In the case of Pierre Yves Joyeux the french gov. is only partly guilty.
Of course the export procedure needs an extra-work .
But Pierre Yves is also one of the last self employed knife maker of Thiers . That means that he has to do everything alone. And he has a lot of orders because of the quality of his knives. At the end the administrative tasks becomes really heavy . :(

@kamagong May be there is a solution. Mr Bruno Coupat is a knife dealer of Saint Flour and he orders all his Laguioles to Pierre Yves Joyeux who makes them with the brand of his client.
So the knives are exactly the same but with a different brand .
You could write him and ask if he would be ok to send you a knife .
