Traditional kitchen knives


I don't know if this was meant to be a large table knife or a small carving knife, but it carves a ham like nobodies business. Got it for a buck at a thrift store. Carbon steel Boker.
 
Since it won't have reached Australia yet, I think I'll post up Meako's Quest knife, wish I'd taken more pics of this one! ;) :thumbup:

 
And here's an old butcher's knife I also picked up on the Quest.

 
I search the Estate Sales for carbon steel. Forge-Craft - Shapliegh Hardware - Old Hickory - CASE XX. I have ordered new Old Hickory from Ontario lately. Maybe not as good as the old carbon, but I couldn't see or prove it. Still good prices.

I have posted lookouts and deployed stinger strips for the postie bike.
Meanwhile heres a couple of venerable butchers knives I cleaned up for a work colleague. They belonged to her father who was a butcher. They are well used but wooden handles do not like the dishwasher.

and hers a carving set I "repaired" for a mate with some antlers after his mum had put them through the dishwasher and ruined the nasty faux bone handles-good stainless sheffield blades too

I got this top one from a cool dead guy (estate sale). His shop was bigger than his house, with multiple table saws and drill presses. Strangely, this Ontario, which seems to have been chemically darkened, was $0.50, and a rusty Forgecraft the same size and shape was $1.00. I left the Forgecfraft for someone else.

The blades today are a lot thinner.

It's so cool to see these old workhorses compared to the new blades being made (although I like them too).

That multi-knife sheath in the next to last picture is super cool too, I've never seen anything like it before. Much more interesting than a nylon knife roll!
 
This one was a gift from a friend here on the forum. At 5 1/2" cutting edge, a perfect fit to my hand, and wonderful old steel, I have had many enjoyable times in the kitchen with this one. It has become over time my go to knife and honestly there is probably nothing in the kitchen I could not do with it. Thanks again my friend!
