a commercial artist offers this for $50 (yikes!) a knife nut can probably learn it within one harvest season.

seems my search for reasons to use my knife has increased my pastry and chile relleno diet. The Chantrele mushrooms and the mango escaped execution.
 
Well, my Peanut helped me today cutting some pear (and an apple or the other...)

We use to do things like that in culinary school, here is something in a much smaller scale you guys might like to try.
