Traditional Thanksgiving knife usage - Turkey Carving 101

I remember that video. It was a good method and PSA. Fairway is right down the street from us.

The book (on which the film is only very loosely based) is much better
Usually the case.
Alan Ladd's Shane was quantum leaps better than the book. I just wish the skinny old dog had slunk out when Shane entered for the shoot-out, instead of waiting for Wilson to stand up. Sure, Shane's the good guy, but he's still a killer who's come on business.

Well, followed the instructions in the video, and had the best turkey-carving experience yet. And I've carved dozens. Used a Buck 121 (the "fisherman"). Worked great!
How hot was the turkey when you carved it, Vince? I've used a carving approach very similar to that in the video, but my challenge has always been not blistering my fingers with hot bird meat! I noticed the guy in the video advised letting the turkey cool for quite a while before carving it.

It was still hot, even though I waited about 45 minutes after taking it out of the oven before I carved it. Used both paper towels and a large fork to help. Some of my children couldn't make it, so I have plenty of leftovers, even though it was a small turkey (22 lbs.). Got a 28-pounder for Christmas in the freezer!

Queen serving knife set. My dad found these knives in a local antique store and gave them to me. I didn't slice the white meat against the grain because it just wasn't working; it would totally fall apart. I waited 15 minutes after it was cooked and that wasn't enough, I definitely had hot hands.

View attachment 1025077 The Bears vs Lions game forced me to let my bird rest longer, since my brother in law and father in law would not want to come eat before it was over.
I have an antique turkey roaster that works great as long as the bird’s not too big.
I just put the lid on and it must have sat for 45 minutes or more.
I used my home made B&T. But I also like to pull a lot of the meat with my hands rather than slice.
No complaints, and the Bears won again!
