Tricks for texturing G10

Sandblasting/beadblasting or hand sanding are the only ways I know. If you don't want to blast it I'd just get some 220 grit and lightly work the scales over. If you want a rougher texture drop down to 120 grit.

Beadblasting gives G-10 a nice dimply texture. The more you do it the tackier it gets, but be carefull about blasting it away from the handle profile revealing metal.
 
Won't give you a rough texture but, scotchbrite, belts or wheels... Barry Jones of the Jones Brothers does some serious contouring/finishing using nothing more than a scotchbrite belt. I have tried it - works well. Shaping and finishing in one shot!
 
You can take the shine off of it with scotchbrite pads J.
