trouble finding steel

I'm planning my next project. It's going to be a set of kitchen knives. I wanted to use s30v stainless, but can't find it in any of the dimensions that I need.
6 @ 9.5" x 1.25" x .1"
1 @ 11.5" x 2.25" x .1"
1 @ 9.25" x 1.75" x .1"
1 @ 13.5" x 1.5" x .19" (3/16")

I figure these will fit on a 6" x 24" sheet, and a separate piece for the carving knife and the 6th steak knife. If it's not possible in s30v, any recommendations on other good stainless that I could get in these dimensions?

No good. While they have a nice selection, they only go up to 2" wide in 3/32. This is great for all but the larger Santoku. They don't seem to have anything wider than 2" in anything other than Kydex.

Ask and ye shall receive. :-) I just checked the cutoff pile and we do have a piece 3/32 x 6 x 18. S30V is getting pretty scarce, but hope to have more shipping to us soon.

Rob is the man, he will get you what you need and treat you like a somebody, even if you are a nobody beginner like me:o

I still need to get the my next 2 blades out to him, I am just waiting on a friend to bore out the handle on the last one and I can punch a hole through the tang for the pin. really makes me wish I had all the tools I need.
 
What about switching to CPM 154cm instead of s30v? I don't plan on a mirror finish anyway, but is it more readily available?
 
Niagara Specialty Metals has plenty of CPM S30-V on the shelf and some CPM-154. You can call us at 800-424-0048. We have also shipped some to Admiral Steel (800) 323-7055 and SB Specialty Metals in Arlington(800-365-1168).

We have more CPM 154 slab on order with Crucible and we should have it rolled into sheet by early-mid May.
