Tru Grit/Jeff Mutz heat treat question (first post with new account)

Got the latest batch back from Tru Grit today. The AEB-L steak knives are 1/16" thick and still came back nice and flat.

That yanagiba is 26C3, and I asked Jeff to surface grind it for me to ensure flatness. The surface grinder finish looks good, and it's definitely flat and true 👌

Hopefully this is the standard going forward, and the first cluster F* was a fluke. Based on this batch though. I'll continue to do business with Jeff.
 
bump I live 25 miles from tru-grit i'm gonna try calling and seeing if I can get service
