I will attempt to answer your questions below:

1. Do you think the Original Satin Finish is Waterlox's most appropriate product for wood knife handles? The "most appropriate" product is fairly subjective. This all depends on the aesthetic that you are looking for. Each of our finishes carries a different gloss level. Original Satin Finish has a gloss level of about 25%, Our Original Sealer/Finish starts off at a gloss level of about 75% then mellows to about a 50% gloss level within a few months. Finally, our Original High Gloss Finish carries a gloss level of around 85%. Compare all of this to a sheet of glass with a gloss level of around 95%. We recommend using the Original Sealer Finish as the base coats and then on the final 1-2 coats using the finish that will give you the gloss level that you are looking for. On a large working surface such as a wood floor more than 1-2 coats of Satin finish will start to cloud the finish or distort the grain. However on a surface like a knife handle you will probably not see much of a difference with all coats being satin with no sealer finish underneath. It is up to you. When in doubt, test.

2. How are the three versions of Satin (TB 6044 Original Formula, TB 6035 VOC Compliant (350 VOC) and TB 6045 VOC Compliant (450 VOC) different? In application and/or in performance? Our Original Formulas such as the 6044 utilize mineral spirits as the solvent for the product. This is the Original family recipe that has remained the same for 100 yrs. The 350 and 450 VOC products use an exempt solvent to get the VOC’s down to the legislated level. The VOC products were not specifically designed as wiping varnishes as the VOC rule is for architectural coatings. That being said, some people have used these products with excellent results. The 6035 and the 6045 dry a little quicker because the VOC compliant exempt solvent flashes off much faster, although the recommended 24 hours between coats remains the same. Please note: Only use the Original Formula with the Original formula and the VOC Compliant with the corresponding VOC compliant product. This is because the exempt solvents in the VOC compliant products may lift the finish in the Original finishes. Overall performance of the product should remain the same regardless of the finish chosen.
