An accurate assessment. Yes, it takes a correct shaped, long thin blade to produce those nice thin turkey breast sliverd slices. DMThis is one time a big thin slicing knife comes in handy. We shared turkey day dinner at my wife's daughter and I did no turkey cutting; only eating. I did notice that the the white meat "slices" were thicker than I generally prefer and that is usually because the knife wasn't all that sharp.
