Hey guys, I've got a couple of slick chefs/gyutos here in Aldo's AEB-L and 52100.

Blade Features:
Hand ground from AEB-L stainless
Cryogenically treated to increase toughness
Concave grind for improved performance
Completely hand finished
Distal taper
Choil and spine have been rounded and polished for increased comfort
Edge was taken to a 6000 wetstone then stropped

Handle Features:
Titanium bolster and butt cap encase solid carbon fiber handle which excentuates the unique tech, look, and feel of this knife.

HRC: 62.5
Blade thickness at spine: .095in/2.4mm and tapers to .015in/.4mm
Thickness behind edge: .007in/.18mm
Tip to handle: 8.7in/220mm
Heel height: 1.85in/47mm
Handle length: 5.3in/135mm
Overall: 14in/355mm
