I am really digging the second knife. If it was ffg and some kind of high performing stainless, I wouldn't be able to resist!

Is the second knife convex or V ground?

This one is hollow ground on a 36" radius platen. It is very close to a flat grind but it has a very shallow hollow to it. I have at least 10 more of these at home that aren't finished and I could easily finish one with the grind you want, email me for more information.

This hollow grind gives you a very fine edge for slicing without having the shoulders and the thickness of a flat ground until you get to the depth of the spine.
Thanks for looking.
