Two Hands

Any knife that is used for safety on board a vessel should be one handed: you may be holding on to something crucial with your other hand. Same applies to carrying a knife while climbing.

Flicking? Not for me, but I couldn't care less if other people enjoy it.
 
I don't understand a need to flick a knife shut, you'll eventually cut off something you wanted to keep. I sometims flick knives open just because I can, but that is only for fun. For actual use I don't do any flicking. I do however really like one-hand operation and sometimes when I'm working I actually have to use the knife one-handed. I have a few lockback knives and those I do have to operate two-handed.

Here is the real world situation. You (a right handed person) are holding the unopened mylar bag of potato chips in your left hand. Grab your flickable knife and slash the top off the bag. Now flick the knife shut, return it to your pocket, and pour the chips into a bowl. What could be simpler?
 
For my use I flick if I can, but then again my dad has always flipped his Spydies open. I find it more practical, but that's just me. I usually encounter 1 handed situations when I do projects, like when I have to have tension on something then and cut it at the same time. Then again, to each his own, it's not even an issue worth discussing.
