I have a couple of Santokus fresh out of the shop available. Both are flat ground in AEB-L and heat treated by Peters' to 61 HRC. 6" Blade length, 11" overall. Hand finished to 600 grit satin, edges at 0.005" before sharpening. All handle woods are stabilized, spacers and liners are G10, and the solid pins are corby bolts. There is a matching Chef's knife for #2 on the site, if interested in both let me know! $350 Shipped- Both Sold.

I also have a 9" AEB-L Chef's knife I'm closing out. It is handled in stabilized curly koa and stabilized maple burl. Also heat treated by Peters to 61 HRC and hand finished to 600 grit satin. Took the edge to 0.006" before sharpening. Was $475, now $390 shipped. Thanks for having a look as always, please don't hesitate with any questions!

Beautiful work Phil......and very tempting. If I hadn't gone to Blade Show and blown my knife budget for the next few months I'd be adding another to our kitchen arsenal.

Congrats to Russell on a nice snag !

Nice work the the Chef knife Phil. Handle is a bit different for you from what I've seen, but looks very clean and functional. Nice...
